Cheese made from raw sheep milk, matured in optimal environmental conditions between 3,5 and 6 months, thus enhancing the flavours from raw sheep milk.

It shows a natural rind, soaked with olive oil during the ripening months, which provides our cheese with a special taste for the most selective palates. Esparto grass marked on its natural rind. Its mass is yellowish ivory coloured, pressed and firm, with small-medium sized eyes evenly distributed throughout it. It has pleasant aromas with nutty hints.All of this, along with the care we handle it with, made this CAMPOESTRELLA MATURED cheese awarded with the Bronze Medal in the world Cheese Awards 2010.
