Cheese made from raw sheep milk, matured in optimal environmental conditions between 4 and 6 months, thus enhancing the flavours from the raw sheep milk.

It shows a natural rind, soaked with olive oil during the ripening months, which provides our cheese with a special taste for the most selective palates. Esparto grass marked on its natural rind. Its mass is yellowish ivory coloured, pressed and firm, with small-medium sized eyes evenly distributed throughout it. It has pleasant aromas with nutty hints.
