Cheese made from raw sheep milk, following the artisanal and traditional methods, providing the maximum care to obtain peculiar texture, aromas and flavours. Its rind is hard, brown, with the drawing in the mould well marked and defined; esparto grass marked on its natural rind, soaked with olive oil during its maturation.

The mass is firm, compact, white coloured, and may show small-medium sized eyes, scattered throughout it. Its texture is very buttery and soft. The aroma corresponds to sheep milk, matured with a gentle aftertaste in which light hints of acidity may appear.
