Cheese made with raw sheep milk, matured under controlled humidity and temperature, for at least 7 months. During that time the cheese evolves in a natural way, getting flavours and aromas almost forgotten.Its natural rind is hard, dark brown coloured, originated by mold with esparto grass marked on it, and grown naturally during its ripening stage.

The mass is firm and compact, showing small-medium sized eyes throughout it. The colour is yellowish ivory. The texture is soluble. It shows intense aromas and flavours with personality, characteristic of the raw sheep milk.
